Mr Martin's Class
The pupils in KS4 have the opportunity to either take a Food Technology GCSE or a City & Guilds Level 2 Diploma.
During Term 1, pupils following the GCSE Food Technology programme conduct a food investigation into the working characteristics, functional and chemical properties of fats when used to make pastry. They experiment using different fats while making shortcrust pastry. The pupils’ conduct surveys gain the opinions of different people on the pastries they make. They use this information to develop their final recipes.
The pupils also plan, cook and present a three course meal. The cooking of the meal is completed during a 3 hour timed task.
During Term 1, pupils’following the City & Guild Level 2 Diploma in Kitchen Services learn to produce hot and cold desserts. While making different desserts, pupils learn to use different tools correctly while experimenting with different preparation and cooking methods. They develop their finishing skills while taking account of the effect the quality of ingredients has on the final product. Also, they develop an understanding of the importance of storing and serving food correctly.
Pupils that follow both courses also have the opportunity to take part in whole school and community events. For Black History Month, the pupils cooked a lunch and held a celebration for the whole school while looking at famous black chefs. The pupils cooked dishes such as curry goat and oxtail stew amongst a host of international dishes.
At Christmas, the pupils cook Christmas dinner for the whole school. They also invite elderly people from the local area to take part in the celebration where we sing Christmas carols and play games.
Parents are invited to come into school and take part in cooking sessions where they can learn to cook healthy meals alongside their child and are able to take the food home to be enjoyed with their family.
